It’s it funny how September hits and suddenly stores are stocked for Halloween, pumpkin spice lattes are in hand, but the temperatures still hover in the 70s and everyone is wearing sandals. The chill will show up soon enough, but why not celebrate the last few days of summer? I went for a run in Central Park on Sunday and am happy to report that shorts and t-shirts are still perfect attire for a fall run, and I’m not ready to give up grilling for hearty winter stews just yet.
Strawberries were on sale at Trader Joe’s last week and I thought, why not stock my freezer with the last tastes of summer? Mojitos always make me think of a warm summer night, kicking back with a tall, cool glass of sweet and tart mint, lime, and rum. These popsicles are just the thing to keep summer in your mind – fresh and fruity without being overly sweet, and with a kick of lime and mint. The only thing that’s missing is the rum, and if you add a shot or two, please let me know how it turns out!
If your kitchen is well stocked, these will work in popsicle molds. If you’re like me and gave up popsicle molds in favor of kitchen cupboard space hogging items like a salad spinner, try pouring these into ice cube trays or using the disposable popsicle bags I reviewed for The Kitchn.
- 1 pound strawberries, cleaned and hulled
- 1/2 cup mint leaves, washed
- 1 lime
- 1/4 cup simple syrup*
- Zest lime and juice lime, set aside.
- Blend strawberries, mint, lime zest, lime juice, simple syrup until smooth. Taste and add more simple syrup if desired.
- Pour into popsicle molds, ice cube trays, or other molds.
- Freeze and enjoy.
*To make simple syrup, combine equal parts water and sugar and heat until dissolved. I like to make a cup or two at a time and keep extra in the fridge, using to sweeten coffee, ice tea, sauces, and the like as needed.
